Heat olive oil in a large skillet over medium heat. Cook red onion until soft, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Add shredded roasted chicken, paprika, Worcestershire sauce, and BBQ sauce. Stir well and cook until heated through, about 2-3 minutes.

Combine butter, minced garlic, and parsley in a medium bowl. Microwave until melted.

Lay 12 slices of bread on a work surface. Spread the melted garlic butter mixture on one side of each piece. Place 6 slices of bread, buttered side down, and layer with 6 slices of Havarti cheese, an even amount of BBQ chicken mixture, and another slice of cheese on top. Cover with the remaining 6 slices of bread, buttered side up.

Place the assembled sandwiches in a large non-stick skillet over medium heat. Cook until the bottoms are golden brown, 3 to 5 minutes. Flip the sandwiches over, reduce the heat to medium-low, and continue cooking until the other side is browned and the cheese is melted, an additional 3 to 5 minutes.
