01 - 8 wooden skewers, soaked in water for 30 minutes
02 - 2 boneless, skinless chicken breasts (approximately 454 g), cut into 2.5 cm cubes
03 - 1 tablespoon extra virgin olive oil
04 - 1 teaspoon kosher salt
05 - ½ teaspoon black pepper
06 - ½ cup cowboy butter, melted
07 - Fresh parsley, chopped for garnish

# Steps to Follow:

01 - In a large bowl, combine chicken cubes, olive oil, kosher salt, and black pepper. Toss to coat evenly.
02 - Thread 4-5 chicken cubes onto each soaked wooden skewer, leaving small spaces between pieces.
03 - Preheat air fryer to 400°F (200°C). Place skewers into the air fryer and cook for 11-12 minutes, flipping halfway through, or until the internal temperature of the chicken reaches 165°F (74°C).
04 - Carefully remove skewers from the air fryer and place them onto a serving platter. Drizzle or brush with melted cowboy butter and garnish with fresh parsley.
05 - Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Thread seasoned chicken onto skewers and place on the baking sheet. Bake for 20-25 minutes, flipping halfway, or until the internal temperature of the chicken reaches 165°F (74°C). Brush with cowboy butter and garnish with parsley before serving.
